An office executive having piping hot lunch
: They are not like the "dabbawalas" of Mumbai and don't help reach food cooked by wives to their husbands' workplaces, as in India's financial capital. Ins-tead, "Khan's Kitchen" brings to offices in different areas of the city hot meals and desserts every noon, using state-of-the-art digital technology.
Khan's Kitchen is the first international standard mega industry-size kitchen in the country, capable of producing over hundred thousand tasty meals, prepared hygienically, every day.
Alal Karim Khan, known to the hospitality trade as Tony Khan, who is the Chairman of Khan's Kitchen, said, designed by Chinese engineers with German and Turkish equipment, this is perhaps the largest such mechanised food production facility in this part of the world.
Tony Khan said the staff members supervise every day the process of collecting fresh vegetables, fresh fish, live chicken, rice and other ingredients directly from the producers.
They are stored after ensuring that the vegetables are fresh, the chickens have been killed in Halal manner and the fish are free of formalin and germs. They are taken to the processing room, where those are cleaned and washed again, for sending those to the kitchen.
The automated cooling and exhaust system in the kitchen ensures that hundred per cent hygiene standards are maintained and the health of the chefs are not affected in any way.
Most of the persons working in Khan's Kitchen are from the locality, are fully trained and they work in shifts. They enter the premises through an area meant for disinfection and their feet are washed when they step through a very tray-like object containing disinfectants near the entrance. They have to wear chef's dress, headgear and mask whether they are working in the processing room or kitchen.
The cooked food is then blast chilled, before being heated and put in food-grade plastic boxes and then in blue bags for Premier Menu and red bags for Executive Menu, in the morning. Olive oil is used for Premier Menu food items. Desserts include firni, halua and the like.
The food is then delivered to different offices across the city before lunch by trained deliverymen, using 22 temperature-controlled transports. The food items are different every day and there are special items on the second week of every month.
Thirty five persons receive order over hotline for meals at the call centre located on the second floor of a building near the kitchen. Orders can also be placed though facebook or e-mail.
Tony Khan said, the menu is constantly rotated. You will find the same menu only after six months. We also prepare meals for people with diabetes or with heart, liver or kidney diseases.
The food grade plastic boxes are washed in hot water and steam before being blow dried. Nothing touches the hand. These can be reused 600 times, he said. The food stays warm for six hours in the airtight boxes, but once you open it, you will have to take the food immediately.
Afroza Begum, Managing Director, Khan's Kitchen_ said her family owns home appliances and cutleries as family business - said she felt the absen-ce of quality food during lunchtime across the city offices.
"I sat with Tony Bhai as to how to meet this demand - supplying food right before lunchtime in a hygienic and better manner. After collecting data from different areas of the city, specially from Gulshan, Ba-nani, Motijheel and Uttara and studying those for a year, we set up Khan's Kitchen with Tony Bhai."
We took bank loan and set this up, she said. Khan's Kitchen is located over 15 bighas of her family-owned land at Boro Beraid, four kilometers from Gulshan-2 in the city, next to a water body.
"The price of our tasty and nutritious meals is very much affordable," Afroza Begum said, and "we have received very good response."
Besides, supplying meals to about 600 persons working with us, we also look after their health. Khan's Kitchen, associated with internship programmes of Asian Deve-lopment Bank (ADB), Inter-national Labour Organisation (ILO), Access to Information (a2i), is helping develop different skills among women and youths.
We also do outside catering for corporate events, annual general meetings, company picnics, walimas, weddings at any place within the city limits.
